     – 1 cup quinoa (rinsed)

     – 2 cups water or vegetable broth

     – 1 red bell pepper (diced)

     – 1 cucumber (diced)

     – 1/4 cup red onion (finely chopped)

     – 1/4 cup fresh parsley (chopped)

     – Juice of 1 lemon

     – 2 tablespoons olive oil

     – Salt and pepper to taste

   – Instructions:

     1. In a medium saucepan, bring water or vegetable broth to a boil. Add quinoa, cover, and reduce heat to low. Simmer for 15-20 minutes until quinoa is cooked and water is absorbed.

     2. In a large bowl, combine cooked quinoa, diced bell pepper, cucumber, red onion, and parsley.

     3. In a small bowl, whisk together lemon juice, olive oil, salt, and pepper. Pour over the quinoa salad and toss to combine.

     4. Serve chilled or at room temperature.

3. Sweet Potato and Black Bean Tacos:

   – Ingredients:

     – 2 medium sweet potatoes (peeled and diced)

     – 1 can black beans (drained and rinsed)

     – 1 tablespoon olive oil

     – 1 teaspoon chili powder

     – 1/2 teaspoon cumin

     – Salt and pepper to taste

     – Corn or flour tortillas

     – Toppings: avocado slices, salsa, chopped cilantro, lime wedges

   – Instructions:

     1. Preheat the oven to 400°F (200°C). Place diced sweet potatoes on a baking sheet, drizzle with olive oil, chili powder, cumin, salt, and pepper. Toss to coat.

     2. Roast sweet potatoes in the oven for 20-25 minutes until tender and slightly caramelized.

     3. Warm black beans in a saucepan over medium heat.

     4. Assemble tacos by filling tortillas with roasted sweet potatoes, black beans, and desired toppings.
